Vietnamese Chicken Noodle Salad Recipe

Needing a new salad recipe? Why not give this Vietnamese Chicken Noodle Salad a try. Not only is this recipe fresh and super tasty but it also provides a great source of protein, carbohydrates and fibre.

If you are wanting to reduce the carbohydrates simply halve the noodles and add more carrot and zucchini. 

Vietnamese Chicken Noodle Salad

Here are the simple steps and all important nutrition information:

Per serve:

  • 2,341kJ
  • 560 Calories
  • 39g Protein
  • 58g Carbohydrate
  • 16g Fat
  • 8g Fibre

Ingredients:

  • 100g chicken breast (cooked)
  • 20g spring onion
  • Fresh parsley
  • Fresh chilli
  • Fresh ginger
  • 1 garlic clove
  • 15g (1tbsp) tahini paste
  • 20mL(1tbsp) soy sauce (salt reduced, gluten free)
  • 5mL (1tsp) rice wine vinegar
  • 4mL (1tsp) honey
  • 5mL (1tsp) sesame oil
  • 2 grams (pinch) chilli flakes
  • 100g carrot
  • 90g zucchini
  • 5ml (1 tsp) lemon juice
  • 45g (raw) vermicelli noodles

Method:

  • Prepare the noodles as per the back of packet instructions then drain
  • Slice the chicken breast as desired
  • Cook on low to medium heat in a non-stick pan
  • Peel carrot and zucchini, chop up spring onion, parsley (or coriander) and chilli and set aside
  • In a medium sized serving bowl, combine the rice noodles, peeled carrot and zucchini, slice cooked chicken breast + spring onion, fresh herbs and fresh chilli
  • Combine ginger, garlic, tahini, soy sauce, rice wine vinegar, lemon juice, honey, sesame oil and chilli flakes in a small bowl and mix thoroughly.
  • Drizzle over the noodle salad and enjoy
